Ingredients

  • 1 cup of long-grain rice
  • 2 cups of vegetable or chicken broth
  • 2 tablespoons of olive oil
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and cook until soft.
  3. Add minced garlic and stir for 1 minute.
  4. Add rice and stir for 2 minutes until slightly toasted.
  5. Pour in the broth and add thyme, rosemary, salt, and pepper.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 18-20 minutes until rice is tender.
  8. Remove from heat and let it sit covered for 5 minutes.
  9. Fluff the rice with a fork before serving.
