Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 package cheese tortellini (9 oz)
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the sausage over medium heat.
  2. Add chopped onion and minced garlic. Cook until onion is soft.
  3. Pour in chicken broth and diced tomatoes. Stir well.
  4. Add tortellini and Italian seasoning. Bring to a boil.
  5. Reduce heat and simmer for 5-7 minutes or until tortellini is cooked.
  6. Add spinach and cook until wilted.
  7. Season with salt and pepper to taste.
