A creamy and cheesy dip made with Rotel tomatoes and cheese, perfect for parties.
Ingredients

- 1 can Rotel diced tomatoes (10 oz)
- 1 lb Velveeta cheese, cubed
- 1/2 cup ground beef (optional)
- 1/4 cup onion, diced
- 1/4 cup bell pepper, diced
Instructions
- In a skillet, brown the ground beef with the onion and bell pepper over medium heat.
- Drain any excess fat.
- Add the can of Rotel and stir to combine.
- In a separate pot, melt the cubed Velveeta cheese over low heat.
- Once melted, combine the cheese with the meat mixture.
- Stir until smooth and creamy.
- Serve warm with tortilla chips.
Notes
- For a spicier dip, use hot Rotel.
- You can add jalapeños for extra heat.
- Make it vegetarian by omitting the meat.
