- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 2 cups mixed vegetables (broccoli, carrots, bell peppers)
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Cook the rice according to package instructions.
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken to the skillet and season with salt, pepper, and garlic powder.
- Cook the chicken until it’s no longer pink, about 5-7 minutes.
- Add mixed vegetables to the skillet and stir for another 5 minutes.
- Pour soy sauce and honey over the chicken and vegetables. Stir well to combine.
- Let it cook for another 2-3 minutes until everything is heated through.
- Serve the chicken and vegetables over rice.
- Garnish with chopped green onions.
