Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, sliced
  • 1 bell pepper, chopped
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the sliced carrot and chopped bell pepper. Cook for 3-4 minutes.
  4. Stir in the broccoli florets and cook for another 2 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the soy sauce and grated ginger. Reduce heat and simmer for 10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with sliced green onions.
