A simple and delicious Chinese soup featuring fresh vegetables.
Ingredients

- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, sliced
- 1 bell pepper, chopped
- 2 cups broccoli florets
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- 2 green onions, sliced for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the sliced carrot and chopped bell pepper. Cook for 3-4 minutes.
- Stir in the broccoli florets and cook for another 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the soy sauce and grated ginger. Reduce heat and simmer for 10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with sliced green onions.

- Chop vegetables uniformly for even cooking.
- Replace any vegetable with your favorite or what’s in season.
- Adjust the soy sauce based on your taste preference.
