Ingredients

- 1 cup rice
- 2 cups water
- 1 can beans, drained
- 1 cup frozen mixed vegetables
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice and water. Bring to a boil.
- Once boiling, reduce heat to low. Cover and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add frozen vegetables and sauté for 5 minutes.
- Add drained beans and soy sauce to the skillet. Mix well.
- Fluff the cooked rice with a fork. Add it to the skillet and stir everything together.
- Season with salt to taste and serve warm.
Notes
- Make sure to rinse the rice to remove excess starch.
- Adjust the vegetables based on what you have on hand.
- For added flavor, consider adding garlic or onion.
