Ingredients

  • 1 cup rice
  • 2 cups water
  • 1 can beans, drained
  • 1 cup frozen mixed vegetables
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Rinse the rice under cold water.
  2. In a pot, combine rice and water. Bring to a boil.
  3. Once boiling, reduce heat to low. Cover and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add frozen vegetables and sauté for 5 minutes.
  6. Add drained beans and soy sauce to the skillet. Mix well.
  7. Fluff the cooked rice with a fork. Add it to the skillet and stir everything together.
  8. Season with salt to taste and serve warm.
