Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, milk, sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, stirring until combined.
- Fold in the chopped pecans.
- Pour the mixture into a greased baking dish.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- Let it cool for a few minutes before serving.
Notes
- Make sure to use pure pumpkin puree, not pumpkin pie filling.
- You can substitute half of the sugar with brown sugar for a richer flavor.
- Check the cobbler at 40 minutes; baking time may vary depending on your oven.
