Ingredients

- 4 medium potatoes, peeled and diced
- 6 slices of bacon, chopped
- 1 onion, chopped
- 3 cups chicken broth
- 1 cup milk
- Salt to taste
- Pepper to taste
- Chives for garnish (optional)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the chopped onion and sauté until translucent.
- Add the diced potatoes and chicken broth. Bring to a boil.
- Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
- Use a potato masher to mash some of the potatoes for a creamy texture.
- Add the milk, salt, and pepper. Stir well and heat through.
- Serve hot, topped with crispy bacon and chives if desired.
Notes
- Make sure to dice the potatoes evenly for consistent cooking.
- Adjust the thickness by adding more or less milk.
- Feel free to add other vegetables like carrots or celery for extra flavor.
