Ingredients

  • 1 onion, chopped
  • 3 cups chicken broth
  • 1 cup milk
  • Salt to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the chopped onion and sauté until translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil.
  4. Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
  5. Use a potato masher to mash some of the potatoes for a creamy texture.
  6. Add the milk, salt, and pepper. Stir well and heat through.
  7. Serve hot, topped with crispy bacon and chives if desired.
