  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, and ginger.
  2. Add chicken thighs to the marinade and let them soak for at least 30 minutes.
  3. Heat a skillet over medium heat and add the marinated chicken.
  4. Cook the chicken for about 10 minutes on each side until it is cooked through.
  5. Remove chicken and keep warm. Add bell pepper and onion to the skillet.
  6. Sauté vegetables for about 5 minutes until they are tender.
  7. Mix cornstarch and water in a small bowl to create a slurry.
  8. Add the slurry to the skillet, stirring until the sauce thickens.
  9. Return the chicken to the skillet and coat with the sauce.
  10. Serve hot with rice or noodles.
