- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup chopped pecans
- 1/2 cup corn syrup
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix flour, brown sugar, granulated sugar, salt, and baking powder.
- In another bowl, whisk together melted butter, eggs, vanilla extract, and corn syrup.
- Combine the wet and dry ingredients until just mixed.
- Fold in the chopped pecans.
- Line a muffin tin with paper liners and fill each cup about 2/3 full with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let them cool on a wire rack before serving.
Notes
- Make sure not to overmix the batter.
- Chop pecans evenly for consistent texture.
- You can substitute walnuts if you prefer.
