Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 pound mixed vegetables (like broccoli, carrots, and bell peppers)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Brush chicken breasts with olive oil on both sides.
  4. Dredge each chicken breast in the cheese mixture until fully coated.
  5. Place the coated chicken breasts on a baking sheet.
  6. Spread mixed vegetables around the chicken on the baking sheet.
  7. Drizzle a little olive oil over the vegetables and season with salt and pepper.
  8. Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
  9. Let it rest for 5 minutes before serving.

Notes
