Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • Cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, soak the chicken in buttermilk for at least 30 minutes.
  3. In another bowl, mix flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.
  4. Remove the chicken from buttermilk and let excess drip off.
  5. Coat each piece of chicken in the flour mixture.
  6. Place the coated chicken on a baking sheet lined with parchment paper.
  7. Spray the chicken with cooking spray.
  8. Bake for 35-40 minutes, turning halfway through, until golden and cooked through.
  9. Let it rest for 5 minutes before serving.

Notes

  • For extra crunch, double coat the chicken by dipping it back into buttermilk and then flour again.
  • Make sure the chicken is fully cooked by checking that the internal temperature reaches 165°F (75°C).
  • You can use any chicken pieces you prefer.
