- 1 pound chicken breast, diced
- 2 cups rice
- 4 cups chicken broth
- 1 cup bell peppers, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat.
- Add the diced chicken and cook until browned.
- Add onion and garlic. Sauté until the onion is translucent.
- Stir in the bell peppers and cook for a few minutes.
- Add rice, chicken broth, paprika, salt, and pepper.
- Bring the mixture to a boil.
- Reduce heat to low, cover the pot, and let it simmer for about 20 minutes.
- Fluff the rice with a fork and serve hot.
Notes
- Make sure not to lift the lid while it simmers.
- You can add other vegetables like peas or corn for variety.
- Leftovers can be stored in the fridge for up to 3 days.
