- 4 chicken thighs
- 2 cups baby potatoes, halved
- 2 cups green beans, trimmed
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix olive oil, garlic, thyme, rosemary, salt, and pepper.
- Add chicken thighs to the bowl and coat them well with the mixture.
- Place the chicken in a large baking dish.
- In the same bowl, add potatoes and green beans. Toss them in the remaining mixture.
- Arrange the potatoes and green beans around the chicken in the baking dish.
- Bake in the oven for 35-40 minutes until the chicken is cooked through and the vegetables are tender.
- Let it rest for 5 minutes before serving.
Notes
- Check the chicken with a meat thermometer; it should reach 165°F (75°C).
- You can substitute chicken thighs with breasts if preferred.
