- 1 pound chicken breast, cut into pieces
- 2 cups mixed vegetables, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
- 1 cup rice
- 2 cups chicken broth
Instructions
- Preheat oven to 400°F (200°C).
- In a large oven-safe pan, heat olive oil over medium heat.
- Add chicken pieces. Season with garlic powder, onion powder, salt, and pepper.
- Cook until chicken is browned, about 5-7 minutes.
- Add mixed vegetables and rice to the pan.
- Pour chicken broth over the mixture.
- Stir gently to combine all ingredients.
- Cover the pan with a lid or foil.
- Bake for 25-30 minutes until rice is cooked and liquid is absorbed.
- Remove from oven and let it sit for 5 minutes before serving.
