Ingredients

  • 1 lb of chicken breast
  • 2 cups of mixed vegetables (carrots, peas, and corn)
  • 1 cup of rice
  • 2 cups of chicken broth
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chicken breast and season with salt, pepper, garlic powder, and onion powder. Cook for 6-7 minutes on each side until browned.
  3. Remove the chicken from the pan and set aside.
  4. In the same pan, add the mixed vegetables and sauté for 3-4 minutes.
  5. Add the rice and stir well to combine.
  6. Pour in the chicken broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
  8. Slice the chicken and place it on top of the rice and vegetables.
  9. Cover and let it sit for 5 minutes before serving.

  • Ensure the chicken is fully cooked by checking that it reaches an internal temperature of 165°F.
  • You can use frozen vegetables for convenience.
