- 1 lb of chicken breast
- 2 cups of mixed vegetables (carrots, peas, and corn)
- 1 cup of rice
- 2 cups of chicken broth
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the chicken breast and season with salt, pepper, garlic powder, and onion powder. Cook for 6-7 minutes on each side until browned.
- Remove the chicken from the pan and set aside.
- In the same pan, add the mixed vegetables and sauté for 3-4 minutes.
- Add the rice and stir well to combine.
- Pour in the chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until rice is cooked.
- Slice the chicken and place it on top of the rice and vegetables.
- Cover and let it sit for 5 minutes before serving.
Notes
- Ensure the chicken is fully cooked by checking that it reaches an internal temperature of 165°F.
- You can use frozen vegetables for convenience.
- Feel free to add your favorite seasonings for extra flavor.
