Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of diced bell peppers
- 1 cup of chopped spinach
- 1 cup of cherry tomatoes, halved
- 1/2 cup of feta cheese, crumbled
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add bell peppers and cook for 5 minutes.
- Add spinach and cherry tomatoes; cook until spinach wilts.
- Fluff the quinoa with a fork and mix it with the vegetables.
- Add lemon juice, salt, and pepper. Stir well.
- Top with feta cheese before serving.
Notes
- Rinse quinoa to remove bitterness.
- Adjust vegetables based on your preference.
- For more flavor, add herbs like basil or parsley.
