Ingredients

  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs, separated
  • 1/4 cup cocoa powder

Instructions

  1. In a mixing bowl, whip the heavy cream until soft peaks form. Set aside.
  2. In another bowl, beat the egg yolks with sugar until pale and creamy.
  3. Add the cocoa powder and vanilla extract to the yolk mixture and mix well.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the whipped cream into the yolk mixture.
  6. Then fold in the beaten egg whites until no white streaks remain.
  7. Pour the mixture into serving dishes and refrigerate for at least 2 hours.
  8. Serve chilled, topped with extra whipped cream or chocolate shavings if desired.

Notes

  • Make sure to separate the eggs carefully to avoid any yolk in the whites.
  • Whip the cream until just right; overwhipping can make it grainy.
