Instructions
- In a bowl, crack the eggs and add milk. Whisk until combined.
- Add diced vegetables and cheese to the egg mixture. Stir well.
- Heat a non-stick skillet over medium heat.
- Pour the egg mixture into the skillet. Cook for 2-3 minutes until the edges start to set.
- Gently lift the edges with a spatula and let the uncooked egg flow underneath.
- Cook until fully set, about 5-6 minutes. Season with salt and pepper.
- Toast the slices of whole grain bread.
- Serve the egg mixture on toast. Enjoy your breakfast!
