- 1 pound of chicken breast

Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the rice under cold water.
- In a pot, combine rice and water, bring to a boil, then reduce heat and cover.
- In a large bowl, mix chicken with olive oil, garlic powder, salt, and pepper.
- Spread the chicken on a baking sheet.
- Add mixed vegetables to the baking sheet.
- Bake for 25-30 minutes until chicken is cooked and vegetables are tender.
- Fluff the rice with a fork after it has cooked for about 15 minutes.
- Serve the chicken and vegetables over rice.

- Check the chicken with a meat thermometer to ensure it reaches 165°F (75°C).
