- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup key lime juice
- 1 egg yolk
- Whipped cream for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom and sides of a muffin tin to form crusts.
- Bake the crusts for 8-10 minutes until lightly golden.
- In another bowl, whisk together sweetened condensed milk, key lime juice, and egg yolk.
- Pour the filling into each crust.
- Bake for another 15 minutes.
- Let them cool, then refrigerate for at least 2 hours.
- Top with whipped cream before serving.
Notes
- Make sure to use fresh key lime juice for best flavor.
- Do not overbake; the filling should be set but still slightly jiggly.
- Use a spoon to help press the crust into the muffin tin.
