Ingredients

  • 500g minced wallaby
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 pack of puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a pot, boil the sweet potatoes until tender, about 15 minutes.
  3. In a pan, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add minced wallaby, thyme, salt, and pepper. Cook until browned.
  6. Drain the sweet potatoes and mash them.
  7. Mix mashed sweet potatoes with the wallaby mixture.
  8. Roll out the puff pastry and cut into circles.
  9. Place a spoonful of filling on one half of each circle.
  10. Fold the pastry over and seal the edges with a fork.
  11. Brush the tops with beaten egg.
  12. Bake for 25-30 minutes until golden brown.
  13. Let cool slightly before serving.
