A delicious recipe for minced wallaby and sweet potato pies that is easy to follow.

- 500g minced wallaby
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
- 1 pack of puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 200°C (400°F).
- In a pot, boil the sweet potatoes until tender, about 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add minced wallaby, thyme, salt, and pepper. Cook until browned.
- Drain the sweet potatoes and mash them.
- Mix mashed sweet potatoes with the wallaby mixture.
- Roll out the puff pastry and cut into circles.
- Place a spoonful of filling on one half of each circle.
- Fold the pastry over and seal the edges with a fork.
- Brush the tops with beaten egg.
- Bake for 25-30 minutes until golden brown.
- Let cool slightly before serving.
Notes
- Ensure the pastry is cold before rolling it out.
- Don’t overfill the pies to prevent leaking.
- Use a fork to crimp the edges for a better seal.
