Ingredients

  • 4 ears of fresh corn
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Husk the corn and remove all silk.
  3. Grill the corn for about 10 minutes, turning occasionally, until it is charred.
  4. In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, and salt.
  5. Once the corn is grilled, brush the mixture over each ear of corn.
  6. Sprinkle cotija cheese on top of the corn.
  7. Serve with extra lime wedges if desired.
