- 4 ears of fresh corn
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled cotija cheese
- 1 teaspoon chili powder
- 1 lime, juiced
- Salt to taste
Instructions
- Preheat your grill to medium-high heat.
- Husk the corn and remove all silk.
- Grill the corn for about 10 minutes, turning occasionally, until it is charred.
- In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, and salt.
- Once the corn is grilled, brush the mixture over each ear of corn.
- Sprinkle cotija cheese on top of the corn.
- Serve with extra lime wedges if desired.
Notes
- Make sure to soak the corn in water for 30 minutes before grilling for extra moisture.
- Use fresh lime juice for the best flavor.
- Adjust chili powder according to your spice preference.
