- 1 cup of rice
- 2 cups of water
- 1 tablespoon of vegetable oil
- 1 teaspoon of salt
- 1 can of black beans, drained and rinsed
- 1 cup of corn, frozen or canned
- 1 cup of diced tomatoes
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1 avocado, sliced
- Cilantro for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat the vegetable oil over medium heat.
- Add the rice and toast for 2-3 minutes until slightly golden.
- Pour in the water and add the salt. Bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes.
- In another pan, combine black beans, corn, tomatoes, cumin, and chili powder. Heat until warm.
- Fluff the cooked rice with a fork and serve on a plate.
- Top rice with the bean mixture and sliced avocado.
- Garnish with cilantro before serving.
Notes
- Don’t skip rinsing the rice; it helps remove excess starch.
- Adjust spices according to your taste.
