Ingredients

  • 2 cups of water
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of salt
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn, frozen or canned
  • 1 cup of diced tomatoes
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1 avocado, sliced
  • Cilantro for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, heat the vegetable oil over medium heat.
  3. Add the rice and toast for 2-3 minutes until slightly golden.
  4. Pour in the water and add the salt. Bring to a boil.
  5. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes.
  6. In another pan, combine black beans, corn, tomatoes, cumin, and chili powder. Heat until warm.
  7. Fluff the cooked rice with a fork and serve on a plate.
  8. Top rice with the bean mixture and sliced avocado.
  9. Garnish with cilantro before serving.
