Ingredients

- 1 cup rice
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 can black beans, drained
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 avocado, sliced
- Chopped cilantro for garnish
Instructions
- Rinse the rice under cold water.
- In a pot, combine rice, water, olive oil, and salt.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 20 minutes or until the rice is tender and water is absorbed.
- In a pan, heat black beans, corn, diced tomatoes, cumin, and chili powder over medium heat.
- Stir and cook for about 5 minutes until heated through.
- Fluff the rice with a fork and serve topped with the bean mixture.
- Add sliced avocado and chopped cilantro for garnish.
Notes
- Make sure to rinse the rice to remove excess starch.
- For a spicier version, add jalapeños to the bean mixture.
- Feel free to add cheese if desired.
