Ingredients

  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 can black beans, drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 avocado, sliced
  • Chopped cilantro for garnish

Instructions

  1. Rinse the rice under cold water.
  2. In a pot, combine rice, water, olive oil, and salt.
  3. Bring to a boil, then reduce heat to low and cover.
  4. Cook for 20 minutes or until the rice is tender and water is absorbed.
  5. In a pan, heat black beans, corn, diced tomatoes, cumin, and chili powder over medium heat.
  6. Stir and cook for about 5 minutes until heated through.
  7. Fluff the rice with a fork and serve topped with the bean mixture.
  8. Add sliced avocado and chopped cilantro for garnish.

Notes

  • Make sure to rinse the rice to remove excess starch.
  • For a spicier version, add jalapeños to the bean mixture.
