A simple and delicious Mexican chicken burrito casserole that’s perfect for beginners.

- 2 cups cooked shredded chicken
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups cooked rice
- 2 cups shredded cheese
- 1 tablespoon taco seasoning
- 4 large flour tortillas
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken, black beans, corn, salsa, rice, taco seasoning, and one cup of cheese.
- Cut the tortillas into quarters.
- In a baking dish, layer half of the tortillas on the bottom.
- Spread half of the chicken mixture over the tortillas.
- Add another layer of tortillas, followed by the remaining chicken mixture.
- Top with the remaining tortillas and sprinkle the rest of the cheese on top.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Use rotisserie chicken for a quicker option.
- Feel free to add more vegetables like bell peppers or onions.
- Store leftovers in an airtight container in the fridge for up to three days.
