Meatloaf muffins are a fun twist on traditional meatloaf. They are easy to make and perfect for meal prep.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup chopped onion
  • 1/4 cup ketchup
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the ground beef, breadcrumbs, milk, onion, ketchup, eggs, salt, pepper, garlic powder, and Worcestershire sauce.
  3. Grease a muffin tin with non-stick spray.
  4. Divide the mixture evenly into the muffin tin, filling each cup about two-thirds full.
  5. Bake for 25-30 minutes or until the internal temperature reaches 160°F (70°C).
  6. Let them cool for a few minutes before removing from the tin.
  7. Serve warm, optionally with extra ketchup on top.

Notes

  • Make sure not to overmix the meat mixture to keep the muffins tender.
  • You can substitute ground turkey or chicken for a lighter option.
  • Feel free to add vegetables like bell peppers or carrots for extra flavor.
