Healthy meatloaf muffins that are easy to make and great for meal prep.
Ingredients

- 1 pound ground turkey
- 1/2 cup rolled oats
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground turkey, oats, onion, bell pepper, and garlic.
- Add egg, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix well.
- Grease a muffin tin or line it with paper liners.
- Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
- Bake for 25-30 minutes until cooked through.
- Let them cool for a few minutes before removing from the tin.
- Serve warm or store in the fridge for later.
Notes
- Use lean ground meat for a healthier option.
- Feel free to add your favorite veggies.
- Check for doneness by using a meat thermometer; it should read 165°F (74°C).
