  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup pasta (small shapes)
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, salt, and pepper until combined.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat olive oil in a large pot over medium heat. Add meatballs and brown them on all sides.
  4. Once browned, add beef broth and diced tomatoes to the pot.
  5. Add carrots, celery, and pasta. Bring to a boil.
  6. Reduce heat and simmer for 15-20 minutes until vegetables are tender and pasta is cooked.
  7. Serve hot, garnished with fresh parsley.
