Ingredients

  • 2 cups of rice
  • 4 cups of water
  • 1 tablespoon of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 can of black beans, drained and rinsed
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, bring 4 cups of water to a boil.
  3. Add the rice and a pinch of salt to the boiling water.
  4. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  5. In a skillet, heat olive oil over medium heat.
  6. Add chopped onion and garlic, sauté until translucent.
  7. Add chopped bell pepper and cook for another 5 minutes.
  8. Stir in black beans, cumin, paprika, salt, and pepper.
  9. Cook until heated through, about 5 minutes.
  10. Fluff the rice with a fork and serve the bean mixture over the rice.
  11. Garnish with fresh cilantro before serving.

Notes

  • Rinse the rice to remove excess starch.
  • Adjust spices to your taste.
