Ingredients
Scale
- 2 cups of rice
- 4 cups of water
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 can of black beans, drained and rinsed
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, bring 4 cups of water to a boil.
- Add the rice and a pinch of salt to the boiling water.
- Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
- In a skillet, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add chopped bell pepper and cook for another 5 minutes.
- Stir in black beans, cumin, paprika, salt, and pepper.
- Cook until heated through, about 5 minutes.
- Fluff the rice with a fork and serve the bean mixture over the rice.
- Garnish with fresh cilantro before serving.
Notes
- Rinse the rice to remove excess starch.
- Adjust spices to your taste.
- Feel free to add other vegetables.
