Ingredients

- 2 cups of leftover cooked rice
- 1 cup of mixed vegetables (carrots, peas, corn)
- 1 cup of leftover cooked chicken or tofu
- 2 tablespoons of soy sauce
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add minced garlic and sauté for 1 minute.
- Add mixed vegetables and cook for 3-4 minutes until they soften.
- Stir in the leftover chicken or tofu and mix well.
- Add the cooked rice and soy sauce to the pan.
- Stir everything together and cook for another 3-5 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy your meal!
