- 2 slices of sourdough bread
- 1 cup cooked lobster meat, chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons butter
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, mix the chopped lobster meat with lemon juice, salt, and pepper.
- Spread butter on one side of each slice of bread.
- On the unbuttered side of one slice, layer the cheddar cheese, lobster mixture, and mozzarella cheese.
- Top with the other slice of bread, buttered side up.
- Heat a skillet over medium heat and place the sandwich in the skillet.
- Cook for about 4-5 minutes until the bottom is golden brown.
- Flip the sandwich carefully and cook the other side for another 4-5 minutes until golden and the cheese is melted.
- Remove from the skillet and let it cool for a minute before slicing.
