Ingredients

  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onions, carrots, and celery. Sauté for about 5 minutes until vegetables are soft.
  4. Add minced garlic and cook for another minute.
  5. Stir in lentils, vegetable broth, cumin, thyme, salt, and pepper.
  6. Bring the mixture to a boil, then reduce heat to low.
  7. Cover and let it simmer for 30-40 minutes until lentils are tender.
  8. Adjust seasoning if needed. Serve hot.
