Ingredients

- 1 cup dried lentils
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat.
- Add chopped onions, carrots, and celery. Sauté for about 5 minutes until vegetables are soft.
- Add minced garlic and cook for another minute.
- Stir in lentils, vegetable broth, cumin, thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low.
- Cover and let it simmer for 30-40 minutes until lentils are tender.
- Adjust seasoning if needed. Serve hot.
Notes
- Make sure to rinse the lentils to remove any debris.
- Feel free to add other vegetables like spinach or potatoes.
- Store leftovers in the fridge for up to 3 days.
