Ingredients

- 1 cup lentils
- 4 cups water
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 bay leaf
Instructions
- Rinse the lentils under cold water.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent.
- Add garlic and carrots, cook for 2-3 minutes.
- Stir in lentils, salt, pepper, cumin, and bay leaf.
- Pour in water and bring to a boil.
- Reduce heat, cover, and simmer for 25-30 minutes.
- Check lentils for tenderness; cook longer if needed.
- Remove bay leaf before serving.
- Serve warm, enjoy!
