- 2 cups of pasta
- 1 pound of chicken breast, diced
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 lemon, juiced and zested
- 1 cup of chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and season with salt and pepper. Cook until browned and cooked through.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and lemon juice. Stir to combine.
- Add the cooked pasta and lemon zest to the skillet. Toss everything together until well coated.
- Cook for an additional 2-3 minutes to heat through.
- Serve warm, garnished with fresh parsley.
