A comforting and hearty lasagna soup that combines all the flavors of traditional lasagna in a warm bowl of soup.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 1 tablespoon Italian seasoning
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic. Cook until onion is soft.
- Stir in crushed tomatoes, beef broth, and Italian seasoning. Bring to a boil.
- Add broken lasagna noodles. Reduce heat and simmer for 20 minutes.
- Stir in ricotta cheese and half of the mozzarella cheese. Mix well.
- Season with salt and pepper to taste.
- Serve hot, topped with remaining mozzarella cheese.
Notes
- Make sure to break the lasagna noodles into smaller pieces for even cooking.
- Use low-sodium broth to control salt levels.
- You can add vegetables like spinach or zucchini for extra nutrition.
