Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, sliced
  • 2 cups vegetable broth
  • 1 cup water
  • 1 cup tofu, cubed
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until soft.
  3. Add the sliced carrot and cook for another 2 minutes.
  4. Pour in the vegetable broth and water. Bring to a boil.
  5. Reduce heat and add the cubed tofu.
  6. Stir in the soy sauce and sesame oil.
  7. Season with salt and pepper to taste.
  8. Simmer for 10 minutes.
  9. Garnish with sliced green onions before serving.
