- 1 can (15 oz) white beans, drained and rinsed
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup diced green chilies
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1/4 cup chopped cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add the shredded chicken and stir for 2 minutes.
- Pour in the chicken broth and heavy cream.
- Add the white beans, green chilies, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot, garnished with cilantro.
