Ingredients

  • 4 cups dashi broth
  • 1 cup tofu, cubed
  • 1 cup miso paste
  • 1 cup sliced green onions
  • 1 cup seaweed (wakame), rehydrated
  • 1 cup mushrooms, sliced

Instructions

  1. Heat the dashi broth in a pot over medium heat.
  2. Add the sliced mushrooms and cook for 5 minutes.
  3. Stir in the cubed tofu and rehydrated seaweed.
  4. In a small bowl, mix miso paste with a ladle of hot broth until smooth.
  5. Pour the miso mixture back into the pot and stir well.
  6. Cook for another 2-3 minutes without boiling.
  7. Remove from heat and add sliced green onions.
  8. Serve hot in bowls.

Notes

  • Adjust miso to taste; start with less if unsure.
  • Use fresh ingredients for the best flavor.
