Ingredients

- 1 cup of cherry tomatoes, halved
- 1 cup of cucumber, diced
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa mixture.
- Toss everything together until well mixed.
- Chill in the refrigerator for 30 minutes before serving.
- Serve in bowls or containers for a perfect lunch.
Notes
- Make sure the quinoa is fully cooked and cooled before mixing.
- Feel free to add your favorite vegetables.
