Delicious homemade ice cream sandwiches made with cookies and creamy ice cream.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chocolate chips
- 1 quart ice cream of your choice
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract. Mix well.
- In another bowl, combine flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture. Stir until combined.
- Fold in the chocolate chips.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool completely on a wire rack.
- Once cooled, scoop ice cream onto the bottom of one cookie, then top with another cookie to make a sandwich.
- Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
Notes
- Use a cookie scoop for even-sized cookies.
- Let cookies cool fully to prevent melting the ice cream.
- Experiment with different ice cream flavors.
- Store sandwiches in an airtight container in the freezer.
