Ingredients

- 2 cups of green beans
- 1 cup of sliced carrots
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of chopped walnuts
- 1/4 cup of dried cranberries
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and trim the green beans.
- Peel and slice the carrots.
- In a large bowl, mix green beans, carrots, olive oil, garlic, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast in the oven for 20-25 minutes, stirring halfway through.
- Add walnuts and cranberries in the last 5 minutes of roasting.
- Remove from the oven and serve warm.
Notes
- Don’t overcook the vegetables; they should remain crisp.
- Feel free to substitute other nuts or dried fruits.
- Check the seasoning before serving and adjust to taste.
