Ingredients

  • 2 cups of green beans
  • 1 cup of sliced carrots
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of chopped walnuts
  • 1/4 cup of dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and trim the green beans.
  3. Peel and slice the carrots.
  4. In a large bowl, mix green beans, carrots, olive oil, garlic, salt, and pepper.
  5. Spread the mixture on a baking sheet.
  6. Roast in the oven for 20-25 minutes, stirring halfway through.
  7. Add walnuts and cranberries in the last 5 minutes of roasting.
  8. Remove from the oven and serve warm.

  • Don’t overcook the vegetables; they should remain crisp.
