Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cups spinach, chopped
- 1 cup diced tomatoes
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery. Cook for 5 minutes until soft.
- Add minced garlic and cook for another minute.
- Pour in the vegetable broth and bring to a boil.
- Add chickpeas, spinach, diced tomatoes, and oregano.
- Reduce heat and let simmer for 15 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy your soup!
