Ingredients

- 1 cup lentils
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add diced potatoes and lentils to the pot.
- Pour in vegetable broth and add cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30-35 minutes until lentils and potatoes are tender.
- Taste and adjust seasoning if needed.
- Serve hot and enjoy your hearty soup.
Notes
- Rinse lentils before adding to remove any debris.
- Feel free to add your favorite herbs for extra flavor.
