Ingredients

  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Add diced potatoes and lentils to the pot.
  5. Pour in vegetable broth and add cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30-35 minutes until lentils and potatoes are tender.
  7. Taste and adjust seasoning if needed.
