Ingredients

  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 cup corn, frozen or fresh
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups shredded cheese (optional)

Instructions

  1. In a large pot, heat a bit of oil over medium heat.
  2. Add the chopped onion and garlic. Cook until soft.
  3. Add the ground beef. Cook until browned.
  4. Stir in the diced tomatoes, kidney beans, corn, and beef broth.
  5. Add chili powder, cumin, salt, and pepper. Mix well.
  6. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  7. If using, sprinkle cheese on top before serving.
  8. Serve hot and enjoy your meal!

Notes

  • Make sure to drain and rinse the kidney beans to reduce sodium.
  • For a spicier dish, add some chopped jalapeños.
  • This recipe can be made in a slow cooker; just combine all ingredients and cook on low for 6-8 hours.
