Ingredients

- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained and rinsed
- 1 cup corn, frozen or fresh
- 2 cups beef broth
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 cups shredded cheese (optional)
Instructions
- In a large pot, heat a bit of oil over medium heat.
- Add the chopped onion and garlic. Cook until soft.
- Add the ground beef. Cook until browned.
- Stir in the diced tomatoes, kidney beans, corn, and beef broth.
- Add chili powder, cumin, salt, and pepper. Mix well.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- If using, sprinkle cheese on top before serving.
- Serve hot and enjoy your meal!
Notes
- Make sure to drain and rinse the kidney beans to reduce sodium.
- For a spicier dish, add some chopped jalapeños.
- This recipe can be made in a slow cooker; just combine all ingredients and cook on low for 6-8 hours.
