A hearty beef mince minestrone soup that’s easy to make and packed with vegetables.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 4 cups beef broth
  • 1 cup green beans, chopped
  • 1 cup zucchini, diced
  • 1 cup pasta (small shapes)
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onion, carrots, and celery. Cook until the vegetables are soft.
  3. Stir in the garlic and cook for another minute.
  4. Add the diced tomatoes, beef broth, green beans, zucchini, oregano, and basil.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add the pasta and cook until tender, about 10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with grated Parmesan cheese.
