Description
A hearty beef mince minestrone soup that’s easy to make and packed with vegetables.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 4 cups beef broth
- 1 cup green beans, chopped
- 1 cup zucchini, diced
- 1 cup pasta (small shapes)
- 1 teaspoon oregano
- 1 teaspoon basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the onion, carrots, and celery. Cook until the vegetables are soft.
- Stir in the garlic and cook for another minute.
- Add the diced tomatoes, beef broth, green beans, zucchini, oregano, and basil.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the pasta and cook until tender, about 10 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
Notes
- Use any small pasta you have on hand.
- Feel free to add any vegetables you like.
- Store leftovers in the refrigerator for up to 3 days.
