- 1 cup quinoa
- 2 cups water
- 1 cup chopped vegetables (bell peppers, carrots, broccoli)
- 1 tablespoon olive oil

Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- While quinoa cooks, heat olive oil in a pan.
- Add chopped vegetables and sauté for 5-7 minutes.
- Once quinoa is cooked, fluff with a fork.
- Mix quinoa with sautéed vegetables.
- Season with salt and pepper.
- Serve warm.
