Ingredients

  • 2 cups water
  • 1 cup chopped vegetables (bell peppers, carrots, broccoli)
  • 1 tablespoon olive oil

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. While quinoa cooks, heat olive oil in a pan.
  5. Add chopped vegetables and sauté for 5-7 minutes.
  6. Once quinoa is cooked, fluff with a fork.
  7. Mix quinoa with sautéed vegetables.
  8. Season with salt and pepper.
  9. Serve warm.
