Ingredients

  • 2 cups of broccoli florets
  • 1 cup of quinoa
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • 1 lemon, juiced
  • 1/4 cup of grated parmesan cheese

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and 2 cups of water. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes until quinoa is fluffy.
  4. Meanwhile, steam broccoli for about 5-7 minutes until tender.
  5. In a large bowl, mix cooked quinoa, steamed broccoli, olive oil, garlic powder, salt, and pepper.
  6. Add lemon juice and parmesan cheese to the bowl. Stir well.
  7. Serve warm and enjoy your healthy dinner.

Notes
