Ingredients

- 2 cups of broccoli florets
- 1 cup of quinoa
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1 lemon, juiced
- 1/4 cup of grated parmesan cheese
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and 2 cups of water. Bring to a boil.
- Reduce heat and simmer for 15 minutes until quinoa is fluffy.
- Meanwhile, steam broccoli for about 5-7 minutes until tender.
- In a large bowl, mix cooked quinoa, steamed broccoli, olive oil, garlic powder, salt, and pepper.
- Add lemon juice and parmesan cheese to the bowl. Stir well.
- Serve warm and enjoy your healthy dinner.
Notes
- Make sure to rinse quinoa to remove bitterness.
- Adjust seasoning to your taste.
- You can add other vegetables if you like.
