Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of cherry tomatoes, halved
- 1 cup of spinach, chopped
- 1 bell pepper, diced
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a large pan, heat olive oil over medium heat.
- Add bell pepper and sauté for 3-4 minutes.
- Add cherry tomatoes and spinach. Cook until spinach wilts.
- Fluff the quinoa with a fork and add it to the pan.
- Season with garlic powder, salt, and pepper. Stir well.
- Cook for another 2-3 minutes to combine flavors.
- Serve warm and enjoy your healthy dinner.
