Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of cherry tomatoes, halved
  • 1 cup of spinach, chopped
  • 1 bell pepper, diced
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a large pan, heat olive oil over medium heat.
  5. Add bell pepper and sauté for 3-4 minutes.
  6. Add cherry tomatoes and spinach. Cook until spinach wilts.
  7. Fluff the quinoa with a fork and add it to the pan.
  8. Season with garlic powder, salt, and pepper. Stir well.
  9. Cook for another 2-3 minutes to combine flavors.
  10. Serve warm and enjoy your healthy dinner.
