Ingredients

  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 cup of chopped vegetables (bell peppers, cucumbers, tomatoes)
  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of lemon juice
  • 1/4 cup of chopped parsley

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa, water, olive oil, and salt.
  3. Bring to a boil, then reduce heat to low and cover.
  4. Simmer for 15 minutes until water is absorbed.
  5. Fluff quinoa with a fork and let it cool.
  6. In a large bowl, combine chopped vegetables, chickpeas, lemon juice, and parsley.
  7. Add the cooled quinoa and mix well.
  8. Serve immediately or chill in the fridge before serving.

Notes

  • Make sure to rinse quinoa to remove bitterness.
  • Feel free to add your favorite vegetables.
  • This salad can be stored in the fridge for up to 3 days.
