Ingredients

- 2 cups of quinoa
- 4 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 cup of chopped vegetables (bell peppers, cucumbers, tomatoes)
- 1 can of chickpeas, drained and rinsed
- 1/4 cup of lemon juice
- 1/4 cup of chopped parsley
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa, water, olive oil, and salt.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 15 minutes until water is absorbed.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine chopped vegetables, chickpeas, lemon juice, and parsley.
- Add the cooled quinoa and mix well.
- Serve immediately or chill in the fridge before serving.
Notes
- Make sure to rinse quinoa to remove bitterness.
- Feel free to add your favorite vegetables.
- This salad can be stored in the fridge for up to 3 days.
